Just an idle thought here, since you mentioned Macross mecha as inspiration...

Imagine you're on the ground, fighting Imperials. Suddenly you see a wierd fighter coming your way. It looks like some kind of TIE-Y Ugly, a TIE ball hull with a Y-Wing's engine necelles mounted in place of the normal panels. It swoops low and decelerates... And then suddenly the engines fold and swing down, and become legs, and the thing touches down, now a walker!

Fighter-walker transformers are already canon, so why not?

I actually had a previous idea involving mecha, based on the Jehuty Orbital Frame from the game Zone of the Enders. Basically, I wanted to replace the cockpit on the frame with a TIE cockpit (as opposed to what appeared a large, pointy phalus). The artwork never came together how I wanted it to, so I let the project lie for a while. I recently came back around to it with the mental image of a cross between the Jehuty and the MandalMotors StarViper. Since the Mandalorians already have a history of using mechanized multi-environment droids as riding vehicles (see the Basilisk War Droid), so they have already made some initial steps to the Star Wars equivalent of Mecha.
