Anyone have guidelines to share in regards to using creatures in scenarios? What do you use as your measure of power vs the measure of power of the characters?

Hssiss are dangerous creatures - how would I judge if a group could handle two of these? There are no advantages such as water in this encounter.

Hssiss/Dark Side Dragon
Dexterity 3D+1
Perception 2D+2
hide 4D+2, search 5D
Strength 5D+2
bite 6D+1, swimming 6D
Special Abilities:
Amphibious: Hssiss can survive both on land and in water, and gain a +1D+1 bonus to their Swim skill.
Bite: Does Strength +1D+1 damage.
Claws: Do Strength +1D damage.
Dark Side Presence: Hssiss have been mutated by continued exposure to Dark Side energy.
Light-side Disruption: Any being using the Force without spending a Dark Side Point suffers a –2D penalty from all Force skills during that attempt (those Force-wielders with 2D or less in any skill cannot use any power that relies on that skill, i.e., they may not spend a Force or Character Point to use the power).
Exceptional Reflexes: Hssiss gain a +1D bonus to all Perception rolls made to determine initiative.
Move: 12 (ground), 18 (swim)
Size: 3 meters long

What have your players dealt with already? If you find that the fight is too hard (or tok easy) you can always fudge some rolls, too.

There doesnt appear to be much of an issue with this creature (unless your players are all/mostly force users). Other than a tough strength score, making it difficult to wound with "typical" weapons, I dont see much of a problem. Dodge and melee parry are both 3D+1 so hitting it shouldnt be a problem...

3 characters. One is a force user with a STR 3D. The other two are STR 2D. I'm concerned that a second one would chew them up too bad.

Agreed. If your 3 PCs can keep at a distance, they should be able to slowly chip away at these dragons. Up close though, is where they can be chewed up and become dragon food.

Also you list a bite brawl skill ranking, but not claw?

Found them in the ToTJC and they are different than online. (Imagine that)

With these stats, the group should be able to handle two of them.

Hssiss/Dark Side Dragon
Dexterity 3D+2
Dodge 4D
Perception 2D+1
hide 4D+2, search 5D
Strength 3D
Brawling 4D+1, swimming 5D
Special Abilities:
Amphibious: Hssiss can survive both on land and in water, and gain a +1D+1 bonus to their Swim skill.
Bite: Does Strength +1D+1 damage.
Claws: Do Strength +1D damage.
Dark Side Presence: Hssiss have been mutated by continued exposure to Dark Side energy.

While there may be no water, there are probably places to hide or wait in ambush. Presumably these Hssiss are predators so I'd either give them some Sneak dice or have them just Hide along a trail or path for the PCs. You might give them a chance to spot the ambush with a Survival roll unless they're paranoid enough to actually Search. Very Happy

Those skills being that 'average' make these 'dark side dragons' little more than box standard Dewbacks..
Dewback (Galaxy guide 1, page 23)
Dex 3d
Per 2d
Str 4d, stamina 5d
Bite Str+1d.

So lets juice them up a bit - make them more ferocious.

Should I go with the original I found? Bump the ones from the TotJC?

All o this is relative to how powerful your PCs are. What are the levels of rlthe skills they rely on to solve problems? (Depending on individual play style the combat capabilities of the creature may not even be a factor).

Also, i don't see any natural armor rating. You would think dragon like creatures would have something.

Maybe it is the D&D fan in me, but I tend to think of dragons in terms of powerful, intelligent flying creatures. Dark Side Dragons in the SWU for me would be evil Duinuogwuins; Hssiss are more like Dark Side Alligators.

Yet most "dragons" in Star Wars are basically large lizards - Krayt, Kel, Lava, Etc Etc.

Hey, just because the writers set their sights low doesn't change how I feel.
