Where can one find a good (comprehensive) list of all the Star Wars books and literature. I have not read that much and want to dive in. Any suggestions on where or how to start: chronologically from the begining, start with the movie gap books, what to avoid, etc

theforce.net book section also has a nice list.

As for the order you should read them. I would suggest starting with the Classic Trilogy, with books like Shadows of the Empire, Tales of the Mos Eisley Cantina/Jabba's Palace/Bounty Hunters, then moving on to post-ROTJ EU (Truce at Bakura, X-Wing, Thrawn, etc... I don't like the New Jedi Order... but anyway I'd leave that for last). Then I'd suggest going back to pre-ANH books like the Han Solo books. And after that go way back to the Ep1 era and start the prequel books.

I know it seems a little convoluted, but some of these books reference each other in a way that I believe you'll get the most enjoyment out of them by reading in this order.
