If someone wanted to play a salvager in your game... akin to Rey on Jakku... what would you call that ability? A Knowledge skill? A Technical skill? A Perception skill?

Combination of all three. Knowledge skills of a variety of sorts (mostly ship design) to know where to look for "the good stuff" on a ship, Perception skills of a variety of sorts to find places that haven't been entirely scrapped out, and various Technical skills (mostly "Repair" varieties) to know how to properly remove the item without damaging or outright breaking it.

Oh, they would need value to know which pieces are even worth the while. They'd also need a technical roll to see if they could repair it. Probably bargain to see if they can get the best deal for their parts.

Also, if you're in a salvage colony, they're probably trading parts with one another. Sure, Rey may have found a broken motivator, but if she doesn't have the parts or the tools to get it working again, she may trade it to Morbin next door for parts she can repair, but he can't.

I don't cover Jakku specifically because it was out of era for the salvager book I did. But you may find some useful tidbits in there.

A mix. Knowledge to know where to sell the stuff, PER to find whats good, and Tech to know what and how to get it out.

I agree with what's been said. Everything doesn't have to be it's own skill. Many occupations require a collection of skills.
