I started my kids (newly 5 and newly 3) on Star Wars; caught up on the last two episodes of Clone Wars, and then started watching A New Hope on Disney+. They were entranced, but lost attention after the Cantina... but that's not bad attention span for them.

No, that's not bad. I think my son was five or six before he started on the films, but I waited until he could sit through an entire movie. You may want to try TPM next. In my experience with multiple young children, they are entertained by Jar Jar and get into a kid main character. That film may hold their interest longer, until they get to galactic senate anyway. And they may come back for the final battle. I've never seen a kid lose interest in the well constructed final battle.
